“Probiotics are live microorganisms (e.g., bacteria) that are either the same as or similar to microorganisms found naturally in the human body and may be beneficial to health. The body, especially the lower gastrointestinal tract (the gut), contains a complex and diverse community of bacteria. Although we tend to think of bacteria as harmful “germs,” many bacteria actually help the body function properly. Most probiotics are bacteria similar to the beneficial bacteria found naturally in the human gut.”1
Probiotics are measured in colony forming units (CFU). CFUs are generally measured in the millions or billions per serving. Probiotics are most commonly beneficial bacteria, but can also be friendly fungal or other organisms, that are typically freeze dried to stabilize them in an inert state during storage and production. Then their continued stability and viability, as measured by CFU counts when cultured, is dependent on limiting their exposure to stimulating environmental conditions such as warmth and moisture. Besides refrigeration, this protection can be done by packaging in glass, as well as by adding freshness packets that help to absorb and reduce moisture in the package.
Temperature plays a role in the stability of probiotics. Colder air holds less moisture and is not in the ideal temperature range for the bacteria to commonly grow and thrive, thus inhibiting reactivation of the dormant organisms by depriving them of the warmth and moisture that represent their ideal growing conditions. High heat can also degrade the viability of these organisms.

Lactobacilli (L. acidophilus, L. rhamnosus, L. casei,L. salivarius) are located in the small intestine and produce lactic acid. Many strains of bacteria from the Lactobacillus family have been shown to support regularity, urogenital and vaginal health, production of the lactase enzymes and protect the gut lining from unwanted materials.*
L. salivarius is a strain of beneficial bacterial that has been shown to resist low pH conditions. It has also been shown to support immune system function by modulating certain cytokines (IL-10 and IL-12).* In vitro studies have shown that L. Salivarius strongly adheres to human epithelia cell lines. This interaction with the mucosa demonstrates its support of the intestinal immune system.*
Bifidobacteria (B. lactis, B. breve, B. longum, B. bifidum) are located in the colon and produce lactic and acetic acids, making the gut a very inhospitable place for unwanted materials. Bifidobacteria have been shown to promote regularity.*
Streptococcus thermophilus is also a lactic acid producer, which lines the gut wall to provide a barrier from unwanted materials, promotes regularity and produces the lactase enzyme.*
